Mango Mojito with Mango Orange Saffron Chilli Sauce


  • 1/2 teaspoon of Chef Wayne's Mango Orange Saffron Chilli Sauce
  • 3 limes
  • 1 very ripe large mango, diced
  • ½ x 28g pack of mint, leaves picked
  • 180ml coconut rum
  • Crushed ice
  • Chilled soda water, to top up
  • Extra mango, mint, and lime, for garnish (optional)


  1. Start by squeezing the juice from 2 limes. In a blender or food processor, combine the lime juice with Chef Wayne's Mango Orange Saffron Chilli Sauce and diced mango. Blend until you have a smooth purée.

  2. Take a shaker and lightly muddle the mint leaves with simple syrup. This will help release the mint's aromatic flavors. If you don't have a shaker, you can use a sturdy glass or a muddler.

  3. Add the coconut rum, lime juice, and mango purée to the shaker. Drop in some ice to cool the mixture. Give it a brief shake to combine the flavors and chill the drink. Alternatively, if you prefer a more traditional presentation, strain the mixture into a highball glass over fresh ice.
